三杯中卷 Three Cup Squid Rolls
材料:
魷魚 180克
薑 50克
辣椒 2根
九層塔 20克
蒜仁 10顆
Ingredients:
180 grams squid
50 grams ginger
2 chili peppers
20 grams basil
10 garlic cloves
調味料:
胡麻油 2大匙
醬油膏 2大匙
細糖 1茶匙
米酒 2大匙
水 2大匙
Seasoning:
2 tablespoons sesame oil
2 tablespoons thick soy sauce
1 teaspoon granulated sugar
2 tablespoons rice wine
2 tablespoons water
法:
1. 鮮魷魚洗淨切圈。薑切片、辣椒剖半、九層塔挑去粗莖洗淨,備用。
2. 熱鍋後下胡麻油小火爆香蒜仁、薑及辣椒,下魷魚及其他調味料,大火煮開後持續翻炒至湯汁收乾再加入九層塔略為拌勻即可。
Preparation Instructions:
1. Wash and cut the fresh squid into rings. Cut the ginger slices. Cut the peppers into halves; remove the basil leaves from the thick stems, wash and set aside.
2. Heat a frying pan, turn down the fire and put in the sesame oil, garlic cloves, ginger, fry a little then put in the chili peppers, squid and other seasonings. Turn on high heat to boil. Stir-fry continuously until sauce is absorbed, then finish by adding in the basil and toss lightly.
